NOTE: This is Part I in our Holiday Recipe Series featuring I) The Appetizer, II) The Entree and III) The Dessert.</br></br>Remember the closing scene in <em>A Christmas Story</em>, when Ralphie & Co. head out to the Chinese restaurant for their holiday meal after the Bumpus’s no-good dogs eat their turkey?</br></br>It’s a great moment in film that serves to remind us that having a little variety in our holiday feasts is actually a pretty great idea, and doesn’t have to be the result of rampaging bloodhounds. So, with that in mind, we offer up a recipe for an easy red-and-green holiday wonton treat:</br></br><strong>Ingredients</strong></br></br>6 oz. lump crabmeat (fresh or canned, but not imitation)</br>4 oz. whipped cream cheese</br>4 cups vegetable oil, divided</br>2 cloves garlic, minced</br>2 green onions, chopped and divided</br>2 tbsp. chili paste (Sambal Oelek)</br>1 cup sesame oil</br>1 tbsp. soy sauce</br>1 pk. wonton wraps</br></br>Number of servings: <em>All the people.</em></br></br><strong>Method</strong></br></br>Use a spoon to mix together crabmeat, cream cheese, garlic, one chopped green onion, chili paste and soy sauce in a medium-sized mixing bowl.</br></br>(You’ll notice right away that you now have <em>a lot</em> of creamy goodness in a bowl, and that’s okay, because you get a lot of wonton wraps in a pack.)</br></br>To assemble your wontons, place a small dollop of mix in the center of a wrap, moisten two edges with sesame oil using a brush or your finger and then fold the opposite edges to match the ones you moistened and press them together to make a triangle filled with yumminess. NOTE: You don’t need a lot in each wonton, because it’ll expand and get gooey once you cook it.</br></br>Repeat the process until you either a) run out of wraps or b) run out of mix.</br></br>To cook, heat 2 cups of the vegetable oil in a medium-sized pan. Place the wontons in the oil and use a slotted spoon or spatula to turn frequently as they cook. Refresh oil as needed. You may also use a <a title="Electric Deep Fryers" href="http://www.atgstores.com/cooking/cooking-dining/small-appliances/electric-deep-fryers/" target="_blank">deep fryer</a> and if you do be sure to avoid overcooking.</br></br>Remove them when they turn golden brown and drain on a plate covered in paper towels. Once slightly cooled, brush with remaining sesame oil, garnish with chopped green onion and serve with sweet chili sauce.</br></br>Okay, so the red chili sauce and green onion may be a bit of stretch, but it’s a <em>delicious</em> stretch and a very easy recipe.
