Traditionally speaking, there are all types of food that are supposed to bring luck in the new year, but the Lazy Chef asked herself what could bring it all together in a fun and easy recipe.
The answer: A hot Cuban sandwich with sauerkraut and sliced apples.
It covers a lot of the bases. It’s got the pork and sauerkraut, which symbolizes New Year’s good luck in many countries, including the good ol’ U.S. of A. And, it’s got apples to represent good health and even better fortune. Put all that on bread with some cheese and honey mustard and things start to get yummy – and you can slice them thin for party <em>hors d’oeuvres</em>.
<strong>The Basic Tools</strong>
Here's what you're gonna need to make these sandwiches:

<li>Bread knife / <a href="http://www.atgstores.com/chefs-knives-knives_2305.html?&option0=optionA=250598|14592~Valu" target="_blank">Chef’s knife</a></li>
<strong>The Ingredients (for 8 servings) </strong>
<li>4 lbs. sauerkraut, rinsed and drained</li>
<li>1 lb. roasted or smoked pork loin, sliced</li>
<li>1 lb. Black Forest ham, sliced</li>
<li>1/2 lb. Swiss cheese, sliced</li>
<li>4 rolls Cuban or Ciabatta bread, sliced and halved</li>
<li>2 Fuji, Gala or Red Delicious apples, peeled and sliced</li>
<li>1 cup honey mustard</li>
<li>1 cup dry white wine</li>
<li>4 tbsp. olive oil</li>
<li>2 tbsp. butter</li>
<li>2 tbsp. packed brown sugar</li>
<li>1/2 tbsp. each salt and pepper</li>
This recipe is a two-parter, but they’re both very easy.
<span style="text-decoration: underline;">Part 1 (The Kraut and Apples)</span>: Melt butter in your pot; stir in sauerkraut and wine, cover and simmer for 1 1/2 hours. Add your apples, brown sugar, pepper and salt, cover again and simmer another 20 minutes. Be careful not to bust up the apples when stirring in your ingredients. Drain when finished.
<span style="text-decoration: underline;">Part 2 (The Panini)</span>:
<li><strong>Step 1:</strong> Brush your sliced bread on all sides with olive oil and press/cook/bake on low heat until just golden on all sides.</li>
<li><strong>Step 2:</strong> Remove bread from heat. Slather with honey mustard on both pieces, then layer sliced pork loin, ham and apples on one half. Top with drained sauerkraut and cheese, then close the sandwich and return it to the heat.</li>
<li><strong>Step 3:</strong> If not using a press, carefully turn and “smash” the sandwiches with a spatula to heat until cheese melts.</li>
Serve hot as a sandwich or slice into thinner wedges and spear with toothpicks to serve as party snacks.
