ATG's Lazy Chef: Turkey Quesadillas

If you enjoyed a bird on Thanksgiving Day there’s a good chance that your taste for turkey is finally waning – stuffed with so much leftover fowl you could sprout feathers at any moment. You’ve done the turkey soup, the turkey pot pie, the turkey casserole and the divine (and arguably unbeatable) turkey and dressing sandwich, but now your options are running out. If so, perhaps it’s time to deploy the ATG Lazy Chef’s quick and easy turkey quesadilla. It’s pretty much just what it sounds like – with a few minor adjustments designed to revive that last batch of aging gobbler still hanging out in your fridge. <strong>The Basic Tools</strong> Here's what you're gonna need to make these quesadillas: <ol> <li><a href="http://www.atgstores.com/skillets-frying-pans_14554.html?linkLoc=topnav" target="_blank">Medium skillet/frying pan</a></li> <li>Advanced alternative: <a href="http://www.atgstores.com/products/view.aspx?sku=6606765&amp;linkloc=singleSearchResult" target="_blank">quesadilla maker</a></li> <li>Spatula</li> </ol> <strong>The Ingredients</strong> <ul> <li>4-6 large soft tortilla shells, flour or whole wheat</li> <li>1 cup turkey, shredded</li> <li>1 cup stuffing</li> <li>1/2 cup green bell pepper, chopped</li> <li>1/2 cup red onion, sliced</li> <li>1/2 cup button mushrooms, sliced</li> <li>1/4 cup cheddar cheese, shredded</li> <li>1/4 cup Pepper Jack cheese, shredded</li> <li>1/2 tbsp. butter/margarine</li> <li>1 tsp. cumin</li> <li>1 tsp. coriander</li> <li>Salt and pepper to taste</li> </ul> <strong>The Method</strong> First, lay out your tortilla shells on a clean space or cookie sheet and smear them with a layer of stuffing, leaving room at the edges. Sauté veggies and turkey together in the pan with butter for 2-3 minutes then drain excess liquid. On low heat, add spices  and stir. Once mixed, spoon the turkey goodness onto the shells and then top with shredded cheese mix. Wipe the pan and put back on low heat. One at a time (or as space allows), fold quesadillas over and cook for about 3 minutes to a side, or until golden brown and the cheese oozes. Add guacamole, salsa and/or sour cream for a deluxe finish. If using a quesadilla maker, just add the filling to the shells in the maker as you normally would.
